Protein popsicles [recipe]

It has been unusually hot and humid here in the Northeast over the last month or so.

I have a quick and easy recipe that can be used as a protein-packed treat when the thought of cooking and prepping makes you sweat even more.

All you have to do is add all the ingredients in a blender. Blend and pour into popsicle molds or just pour into a cup and scoop it out with a spoon.

Ingredients:

  • 2 cups full-fat plain greek yogurt

  • 1/3 cup coconut milk

  • 1 scoop of vanilla or protein powder (we used Jay Robb)

  • 2 cups blackberries

  • 2 medium mangos peeled and cut into chunks

No extra water was needed to dilute this mixture.

Simple. Right?

They can even be used for kiddos as a breakfast treat. It has fruit, some fat from the yogurt and lots of protein. It's good for them and they can tell their teachers you gave them popsicles for breakfast.

Win. Win.

Obviously, you can sub out the fruit I used and add your own and use chocolate protein powder instead of vanilla.
