Pancakes without the pancake mix? [recipe]
Pancakes are delicious. Now, I know I am not telling you something so earth-shattering that you did not already know it.
But, depending on your fitness goals, pancakes may not be part of the current plan. Or could they?
Sundays are the only day that I do not go over to EBM to work with people. Every other morning I am up and out early.
So, when the E, B, and M wake me up early on Sunday mornings, and after I stop yelling at them for being too loud too early in the morning, I take the kids downstairs to make some breakfast.
Every Sunday, I/we make protein pancakes, bacon and scrambled eggs. The boys have become more interested, as of late, in helping make the food, which is awesome. As they get older, they will all learn how to cook.
I was searching for a better way to make pancakes without having to use the pancake mix. And I found one. Here is a picture of your ingredients:
So what do we have in the picture?
1 banana
2 scoops of protein powder. I like chocolate for this recipe. You can use whatever makes you feel happy on the inside.
2 eggs
1/8 tsp of cinnamon. I use 1/4 tsp.
1/4 tsp baking powder
1/4 tsp salt
Mini chocolate chips (optional and not pictured). I sprinkle some mini chips into each pancake. Depending on the size, you will get about 8-10 pancakes for this amount.
I find that I do not need any syrup or anything to sweeten these bad boys. They are plenty good all by themselves.
Take all of that, throw it into a food processor (or some other device that will mix all that stuff together). No need to add any water or anything like that. The mixture will be perfect for making pancakes.
